With the fundamental purpose of reducing the incidence of foodborne illnesses and improving Mexico's image, a National Hygienic Food Management Program, called the "H" Distinction, was implemented.
This program is designed to assist and foster good quality and hygiene practices in food preparation. It is a preventative 100% workshop and includes staff training in washing, disinfection, cleaning, storage, freezing, refrigeration, defrosting, hygiene, personnel, and other techniques, to be implemented as a continuous improvement process.
